[bug#42899,v6,1/3] gnu: dovecot: Set moduledir to global directory.

* gnu/packages/mail.scm (dovecot)[arguments]: Add configure-flag to set
moduledir. Adjust custom 'install phase to override moduledir so it
successfully installs.
